Reduces Microbial Population and Maintain Quality of

Fresh-cut Cantaloupe &  Litchie Fruit

Innovative treatments are needed to increase antimicrobial efficacy while maintaining quality of fresh-

cut cantaloupe. This study was conducted to investigate the effects of
surface sanitization of whole

cantaloupes with acidified calcium sulfate (ACS) in
comparison with three common sanitizers on

microbial population and quality of freshcut
cantaloupes. Whole cantaloupes were submerged in water,

100 ppm chlorine, ACS
(1.2% Safe2O-ACS50), 1000 ppm acidified sodium chlorite (Sanova), 80 ppm

peroxyacetic acid (Tsunami), and combination of ACS and Tsunami for 10 min.  Populations of aerobic

bacteria, yeast and mold on the rind of whole cantaloupes were
measured. Quality and microflora

population of the fresh-cut pieces prepared from the
whole fruits were quantified during 14-day storage

at 4 C. Compared to water wash,
none of the treatments had a consistent effect on bacterial population on

the surface of
whole cantaloupe. Yeast and mold count on the whole cantaloupe was reduced by chlorine,

Tsunami and Sanova while ACS only reduced the count in one of the two trials.

However, none of the sanitizers had any significant effect on the fresh-cut samples prepared from the

surface pasteurized whole fruit. The aerobic bacterial population on
the fresh-cut cantaloupe was

significantly reduced by ACS and Sanova pasteurization of
whole fruit. The low population of bacterial

population on the fresh-cut fruit was
maintained during the entire storage period. Other treatments had

no
population. The combination of ACS and Tsunami did not provide any additional microbial reduction

compared to ACS or Tsunami alone. Color, texture,
soluble solids content, pH, ascorbic acid and drip loss

were not consistently affected by
any of the treatments. Samples treated with Tsunami deteriorated in

appearance and
aroma after 7 and 14 days of storage in one of the trials. Our results suggest that

sanitization of whole cantaloupe with ACS had a similar efficacy as Sanova in reducing microbial

population on the fresh-cut samples and was better than Tsunami and chlorine.

Therefore, ACS is a potential surface sanitizer of whole fruit for preparing fresh-cut

cantaloupes.

 Interpretive Summary: Two of the most serious problems affecting the postharvest quality of litchi fruit are decay and browning or loss of red color on the peel of the fruit. We found that treatment of litchi fruit with acidified calcium sulfate, a GRAS (Generally Recognized As Safe) compound, could inhibit the mold growth, prevent browning and retain red color of the peel. We also showed that this treatment did not have any adverse effect on the internal quality of the litchi fruit including soluble solids, sugar, and organic acid content. Information obtained in this study is of interest to other scientists and will be useful and beneficial to the litchi fruit industry and consumers.

Technical Abstract: The effect of acidified calcium sulfate (ACS) on quality of litchi (Litchi chinensis Sonn. cv `Brewster") fruit after harvest was evaluated. ACS at 1.25% or higher concentrations significantly inhibited the activities of polyphenoloxidase and peroxidase in pericarp during storage at both 5 and 10 ºC. These treatments also effectively prevented browning and retained red color of the outer shell of the fruit. Total phenolic and total anthocyanin content in pericarp were increased by the ACS treatments at the dose dependent manner. The radical scavenging activities for ROO", DPPH*, "OH and O2"- were also enhanced by ACS, particularly by 2.5 and 5% concentrations. The activities of several antioxidant enzymes and enzymes of ascorbate-glutathione cycle including catalase, ascorbate peroxidase, glutathione peroxidase, glutathione reductase, dehydroascorbate reductase, and monodehydroascorbate reductase gradually declined during storage. However, ACS enhanced the activities of these enzymes especially at the beginning of the storage. Samples treated with ACS generally had higher flavonoid levels then the control. The two major flavonoids, cyanidin-3-rutinoside and cyaniding-3-glucoside, were found to be significantly increased by 2.5 and 5.0% ACS at both 5 and 10 ºC. No differences were detected among various treatments in soluble solids content, sugar, and organic acid levels in the pulp of litchi fruit, indicating that the internal quality of the fruit was not affected by the ACS treatment.

POTENTIAL HEALTH EFFECTS

 

Inhalation:  Inhalation of undiluted Acidic Calcium Sulfate may produces damaging effects  on the mucous membranes and upper respiratory tract. Symptoms may include irritation of the nose and throat.  May cause lung edema, a medical emergency.

 

Skin Contact: Corrosive. Symptoms of redness, pain, and burn can occur by skin contact with undiluted Acidic Calcium Sulfate.

 

Ingestion: Acidic Calcium Sulfate is a food additive, however ingestion of undiluted ACS 100 may  cause burns to the mouth, throat, and stomach.

 

Eye Contact: Contact with undiluted redness,  may cause blurred vision, and  pain & severe tissue burns.

 

Chronic Exposure: Chronic exposure to mist of the undiluted Acidic Calcium Sulfate may increase risk of cancer.

 

Aggravation of Pre-existing Conditions: Persons with pre-existing skin disorders or eye problems or impaired respiratory function may be more susceptible to the effects of undiluted Acidic Calcium Sulfate.

 

Section 5 – FIRST AID MEASURES

 

Inhalation:  Remove to fresh air. If not breathing, give artificial respiration. If breathing is difficult, give oxygen. Get medical attention immediately.

 

Skin Contact: In case of contact, immediately flush skin with plenty of water for at least 15 minutes while removing contaminated clothing and shoes.  Wash clothing before reuse.

 

Ingestion: If swallowed, DO NOT INDUCE VOMITNG. Give large quantities of water. Never give anything by mouth to an unconscious person. Get medical attention immediately.

 

Eye Contact: Immediately flush eyes with plenty of water for at least 15 minutes, lifting lower and upper eyelids occasionally. Get medical attention immediately.

Section 6 – FIRE FIGHTING MEASURES

 

Fire: Concentrated material is a strong dehydrating agent. Do not store around unapproved chemicals (see Section 10). 

 

Explosion: A mild exothermic reaction may occur  when undiluted Acidic Calcium Sulfate is added to water. 

 

Fire Extinguishing Media: Dry chemical, foam or carbon dioxide.  Water spray may be used to keep fire exposed containers cool.

 

Special Information: In the event of a fire, wear full protective clothing and NIOSH-approved self-contained breathing apparatus with full face piece operated in the pressure demand or other positive pressure mode. Structural firefighter's clothing is ineffective for fires involving this material. Stay away from sealed containers.

 

Section 7 – ACCIDENTAL RELEASE MEASURES

 

 

Ventilate area of leak or spill. Wear appropriate personal protective equipment. Isolate hazard area. Keep unnecessary and unprotected personnel from entering. Contain and recover liquid when possible. Neutralize with alkaline material (soda ash, lime), then absorb with an inert material (e.g., vermiculite, dry sand, earth), and place in a chemical waste container. Do not use combustible materials, such as saw dust. Do not flush to sewer. US regulations (CERCLA) require reporting spills and releases to soil, water, and air in excess of reportable quantities. Store  in well ventilated storage area.  Protect from physical damage. Keep  away from incompatible materials. When diluting, always add ACS I00 to water; never add water to undiluted Acidic Calcium Sulfate.
